Based on the Dundee cake in Scotland, this rich, moist cake is stuffed with fruits that have been soaked in scotch overnight. Fruits include cherries, sultanas, currants, pineapple and ginger. Perfectly paired with a cup of coffee, a cozy fire, and a friend or two. 10 oz. loaves are sold year round, and 1 lb. rounds are generally sold for the winter holidays.
The loaves will last a couple of months if stored in the refrigerator unopened, and up to 6 months for the boxed round cakes if stored in a cool, dark place unopened.
